Baingan Bharta (Eggplant curry)

Baingan Bharta is a vegetarian dish made from roasted eggplant cooked with onions, tomatoes, chillies and other spices.  It is hard to recognize eggplant in this mashed version.  Hence, even if you have an aversion for eggplant, you would like this dish.  The dish goes well with Indian breads, Paratha or Chapathi.  Enjoy!

Ingredients

Eggplant - 1
Onion - 1 medium
Green chillies - 3
Tomato - 1
Garlic paste - 1 tsp
Ginger paste - 1 tsp
Cumin seeds - 1 tsp
Turmeric - 1/4 tsp
Chilli powder - 1/2 tsp
Coriander powder - 1 tsp
Garam masala - 1/2 tsp
Salt
Curry leaves
Cilantro leaves

 Method

Cook the eggplant in the oven for 45-60 minutes at 400 F.   Let it cool and peel the skin and cut it into small pieces and set it aside.

Heat 2-3 tsp of oil in a pan and add the cumin seeds, when the seeds sputter, add the chopped onions, green chillies and curry leaves.  When the onions are translucent, add ginger and garlic paste and fry for 2-3 minutes.  Add the chopped tomatoes, salt, turmeric powder, chilli powder and coriander powder.  Fry the mixture until the onions blend with the tomatoes

Add the eggplant and add Garam masala and cook on medium heat.  Let the eggplant cook well in the onion/tomato mixture.  Garnish the Baingan Bharta with Cilantro leaves.  Enjoy!
